Ingredients
  

  • 1 bag coleslaw mix
  • 1 can black beans, rinsed
  • 1 cup corn kernels
  • 1 medium jalapeño pepper, diced
  • 1 medium red bell pepper, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon chipotle sauce
  • 1 bag Chili Cheese Fritos
  • 1 tablespoon taco seasoning
  • 1 teaspoon ground cumin

Method
 

  1. In a large mixing bowl, combine the coleslaw mix, rinsed black beans, corn, jalapeño, red bell pepper, green onions, and cilantro. Toss together gently.
  2. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  3. Pour the dressing over the salad mixture and fold gently with a spatula. Add taco seasoning and ground cumin.
  4. Mix in the Chili Cheese Fritos, reserving a handful for garnish.
  5. Transfer to a serving dish and sprinkle reserved Fritos on top before serving.
