  • 4 fillets Cod, thick, white cod fillets
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tablespoon Ginger
  • 1 can Coconut Milk
  • 3 tablespoons Lemon Juice
  • 1 teaspoon Lemon Zest

  1. Preheat your oven to 180°C (350°F).
  2. Generously sprinkle salt and pepper onto the cod fillets.
  3. In a skillet, heat olive oil, and sauté the onion until translucent.
  4. Add garlic and ginger, stirring until fragrant.
  5. Mix in the coconut milk, lemon juice, and zest, and let it simmer.
  6. Place the seasoned cod fillets in a baking dish, and pour the sauce over the top.
  7. Bake for 20-25 minutes, until the fish flakes easily with a fork.

Notes

Garnish with fresh cilantro or parsley for added freshness. Store leftovers in an airtight container in the refrigerator for up to 2 days.
