Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 3 garlic cloves, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt to taste
  • 6 large carrots, peeled and cut into sticks
  • 1 tablespoon olive oil
  • Salt and pepper to taste

  1. Preheat oven to 400°F (200°C) and roast carrots.
  2. Boil potatoes and prepare for mashing.
  3. Season and sear chicken in a skillet.
  4. Mash potatoes with butter and milk.
  5. Assemble and serve the dish.

Notes

You can prepare this dish with chicken thighs. Deglaze the pan with chicken broth or lemon juice for added flavor. Store leftovers in the fridge for up to 3 days.
